Pierre Koffmann came to London for a short stint aged 22 because he wanted ‘to watch England vs France at Twickenham’. He worked in the Roux brothers’ kitchen at Le Gavroche and before long they made him Head Chef at The Waterside Inn, where he achieved two Michelin stars. Three more Michelin stars followed at his own restaurant La Tante Claire – a career-defining restaurant for the most renowned chefs working today, who trained under Chef Ko!mann and became his protégés. There is no doubt that Pierre Koffmann is the ‘chef of chefs’ and ‘the chef all other chefs look up to’. It’s only right that now, in his 50th year in the kitchen, Pierre has been persuaded to write his first new book for 25 years.
CLASSIC KOFFMANN features over 100 recipes spanning his career, from signature dishes (pig’s trotter and pistachio soufflé) to the modern classics he serves today. PIERRE KOFFMANN arrived in the UK in 1970, expecting to stay a few months. His kitchens include Le Gavroche, The Waterside Inn, La Tante Claire, Koffmann’s at The Berkeley and a ten-day pop-up on the roof of Selfridges that lasted two months. His TV credits include  The Taste, Masterchef and he will be head judge on BBC’s Yes, Chef starting in September. He lives in London.
